Hello all! Hope your doing well. This afternoon was pretty crazy. I was baking my mittens off! See, I love giving at Christmas time and the holidays, and more often than not, I chose the inexpensive delicious gift option: food! Ususally it’s Christmas cookies because they are the best things to transport and their so good😋😋. Every time I bring them to people they are so touched and they love the thoughtful delicious gifts. Holiday cookies are one of my favorite gifts to give. This year I chose to go with an orange shortbread cookies with an orange glaze. These are so good and I love orange this time of year. They are also perfect because they require simple ingredients so you can make as many batches as you want! (I made around four). Also the dough comes together fairly easily. So if your looking for an easy gift to give that people will love, consider this one!

Orange Shortbread Cookies
Ingredients
7 tbs. of canola oil
2/3 cup granulated sugar (130g)
1 large egg
1/4 tsp. vanilla extract
1-2/3 cups of flour (200g)
3/4 tsp. baking powder
2 oranges or clementines (about 1 tbs. of zest per batch and 3 tbs of juice)
1 tsp. salt
1-1/2 tsps. of cinnamon
Glaze:
1/2 cup (50g) of confectioners sugar (also known as icing sugar, 10x sugar, frosting sugar, powdered sugar, it has many names!!)
3-4 tbs. of orange juice
Directions
Preheat the oven to 400 degrees Fahrenheit or 200 degrees Celsius.
In a large bowl, add the oil, vanilla, sugar, orange zest and orange juice and whisk until combined.
Add the egg and whisk again to combine.
Sift the flour, salt, baking power and cinnamon over the bowl and now, switching to a rubber spatula, fold until a dough comes together. (You may want to switch to your hands during the process, which is what I wound up doing).
Roll the dough into a log and cut uniform slices with a knife.
Place the cookies on a greased cookie sheet and bake for 7-10 minutes, or until barely golden brown.
For the glaze:
Mix together the powdered sugar and orange juice on a small bowl until combined. It should be a bit thin but not too thin and also pourable.
Transfer the cookies onto a cooling rack and spoon over the glaze. Let the cookie set for at least five minutes and then package them as you like!
I used small Treat bags tied with silver ribbon.
Repeat this recipe as needed for all of your gift giving. 😀😀
Vegan Substitutes
Replace the egg with 4 tbs. sweetened condensed milk or 4 tbs. of yogurt.

Those sound SOOOOO good. My stepdad is obsessed with shortbreads. I know he would love these. I’m sending the recipe to my mom now!!!
