Hello everyone! Ever have a situation where you have friends coming over but you dont have a treat to serve them? Or you want something sweet in less than half an hour that happens to be cookies? Well say no more! These PB & J cookies taste like peanut butter and jelly, in a mix of crisp and smooth form! With only three main ingredients, these cookies are gluten free (not on purpose) and they taste delicious! Enjoy!
PB & J Cookies-
Ingredients-
One cup (250g) peanut butter; any kind will work
1 cup (225g) sugar
One egg
Jelly/Jam (I used grape)
Optional: Vanilla extract, cinnamon, salt
Directions-
Preheat your oven to 350 degreees F (180 degrees C). Line baking sheets with silicone mats or lightly grease.
In a large bowl, mix the egg and sugar together until smooth.
Add the peanut butter and mix until well combined.
Gently mix in the vanilla, cinnamon and small pinch of salt if using and mix until everything is well combined.
Place small mounds of peanut butter cookie dough on the cookie sheets. Then add a small spoon of jelly in the middle, and add more cookie dough on top. You should get about twelve cookies.
Using a fork, make a criss cross pattern on the cookies.
Bake for about 10-15 minutes, checking every so often to avoid burning.
Let cool and enjoy! (Best served with a glass of milk).
MAKE IT VEGAN:
For the butter, use vegan butter (earth balance)
For the egg, use 3 tbs. of JUST egg (vegan egg substitute)
These look so yummy! 😍 Do you think this recipe would come out okay if I substitute the peanut butter with almond butter, soy butter, or sunflower seed butter? (I’m allergic to peanuts but these cookies look amazing and I’d love to try them. 😄)
