Vegan Pancakes

Hey everyone! I ran out of eggs in my house so I decided to experiment some breakfast ideas. I was really in the mood for pancakes, so I tried to see if I could accomplish a recipe for pancakes that are 100% vegan and atill tasted just as good as regular pancakes. After a few trials, I came up with this recipe for blueberry pancakes (or without the fruit)  that is totally vegan and tastes just as good as regular pancakes! I made even be making these more often than regular pancakes because of the simplicity and good flavor. Whether you’re vegan non-vegan, this is a perfect recipe for you!

 

Vegan Pancake Recipe:

 

Ingredients:

 

1/2 cup (60 grams) flour

1 tablespoon baking powder

2 tsps cinnamon (if desired)

1/2-1 tablespoon sugar

a pinch of salt

1/2 cup (120ml) dairy free milk (I used almond)

a splash of vanilla (optional)

Blueberries (optional; to taste)

 

Directions:

 

In a medium sized bowl, whisk together the flour, baking powder, cinnamon (if desired), sugar and salt.

Add the dairy-free milk and vanilla to the dry ingredients and mix together until fully combined.

Heat a skillet and spray with cooking spray; add about 1/4 cup of pancake batter to the pan and let it cook for about 2 minutes (or until bubbles start to form on the top of the pancakes). Flip it over and cook for another minute.

 

Put the pancakes on a plate, drizzle them with syrup and enjoy!

(Makes 1-2 servings)
