Hello everyone! Can you believe today is already December 1st? That means in 24 days it’ll be Christmas! It’s time for my annual 25 days of Christmas blogging, where I share some of my favorite Christmas themed recipes! For day one, I thought I’d share a delicious cookie recipe, filled with apple: these are my favorite Apple Stuffed Cinnamon cookies!
Apple Stuffed Cinnamon Cookies Recipe:
FOR THE COOKIE DOUGH
- 1/2 cup butter (112.5 grams)
- 1/2 cup sugar (100 grams)
- 1 egg
- 1 1/2 cups flour (187.5 grams)
- 1 teaspoon baking powder (5 grams)
- 1/2 teaspoon vanilla (2.10 grams
FOR THE APPLE FILLING
- 2 apples cored, peeled and diced small
- 1 1/2 tablespoons butter (20 grams)
- 2 tablespoons brown sugar (20 grams)
- 1/2 – 1 teaspoon cinnamon (3-6 grams)
Preheat the oven to 350 degrees F (180 degrees C).
In a small pot, add the apples and the rest of the filling ingredients. Cook the mixture for about ten minutes, or until the apples are tender. Remove from the heat and cool.
In a medium sized bowl, whisk the butter, sugar, and vanilla until combined and smooth. Add the egg and mix. Then add the flour and baking powder and fold together with a spatula.
Chill the dough for 15 minutes in the fridge.
Prepare a cookie sheet with a silicone mat or baking paper. Add about two tablespoons of dough to the pan; then add a tablespoon of the cooled apple filling and another tablespoon of dough on top. Seal the cookies and chill for another ten minutes.
Brush the cookies with milk and sprinkle with cinnamon sugar.
Bake for about 15 minutes, until the cookies are golden brown. Cool and enjoy!
MAKE IT VEGAN:
For the butter, use equal parts of vegan butter (earth balance)
For the egg, use 3 tbs. of JUST egg (vegan egg substitute)
