Garlic Rosemary Focaccia

Hello everyone! I hope all is well; this morning I realized that the family bread supply was low which could only mean that it was time to make more bread; however I had made plain bread many times and I wanted to venture into making something more fun, with more flavor perhaps. So I did some research and developed this recipe for garlic Rosemary focaccia! I’m not sure if it’s just me, but I’ve been seeing focaccia everywhere lately. This recipe features garlic, rosemary, and thyme; the flavor is absolutely delicious, like bread you’d be offered at an Italian restaurant (if I do say so myself). Plus, it’s really fun to simple the bread! I think this is the perfect recipe for anyone, whether you’re new to bread making or not. Enjoy!

Garlic Rosemary Focaccia Bread


  • 4 cups (480g) all purpose or bread flour
  • 1/2 tsp black pepper 
  • 1 tsp salt 
  • 2-1/4 tsps yeast  
  • 2 cups (475ml) warm water 
  • Butter to grease pan 
  • 1/4 cup (60ml) olive oil 
  • 2 finely minced garlic cloves
  • 1 tbs. chopped fresh rosemary 
  • 1 tbs. chopped fresh thyme 
  • Salt, for the top


  1. In a skillet, combine the olive oil, garlic, rosemary, thyme, and black pepper. Cook on medium low heat for 5 minutes or until the oil starts to become aromatic but before the garlic browns. 
  2. In a bowl, combine the flour, salt, and pepper. Stir and then add in the yeast to stir it in last. 
  3. Add the warm water and mix until the dough comes together.
  4. Knead until the dough is smooth. 
  5. Oil the bowl, cover it with plastic wrap and a clean kitchen towel and let the dough rise for an hour.
  6. After the hour, heat the oven to 450°F.
  7. Butter the pan; use 2. tbs. of the garlic-olive oil mixture to oil the pan as well.
  8. Turn the dough out onto the pan but don’t press down; dimple the dough to form it into the pan. Top with the remaining 2 tbs. of the garlic-olive oil mixture and spread evenly. 
  9. Let the dough rise for another 20 minutes. Sprinkle the top of the dough with salt, to taste.
  10. Bake until golden (check it at 15 minutes, but it could go up until 25). 
  11. Cool the bread; cut into slices, and serve! 


  • This bread can also be dimpled into a pie plate if you would prefer. 
  • The focaccia is great sliced in half and used as a sandwich.
